Great taste and texture go hand and hand in Moon Shine's Molasses Muffin Treats. Packed with protein, fiber and and a warm molasses flavor, they're so good and healthy you can bake-up a batch and have one or two for breakfast every day! (Also great with lunch, dinner and in-between meal snacks!)
Ingredients:
1 cup milk (1%, 2% or whole)
1 tablespoon of vinegar
1 ½ cups oat bran
1/6 cup applesauce
1/6 cup canola oil
1 egg
1/3 cup granulated sugar
1/3 cup molasses
1 teaspoon vanilla
1 cup almond flour
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
½ cup dried fruit or nuts (optional)
Preheat oven to 375 degrees and grease 16 muffin cups. In a medium bowl put milk and add vinegar, and let it stand for 5 minutes. After 5 minutes add bran and let it sit for 10 minutes. While bran and milk is sitting, beat together applesauce, canola oil, egg, sugar, molasses and vanilla in a larger mixing bowl. In a separate bowl sift (or mix together) almond flour, baking powder and soda and salt. Add bran mixture to egg and sugar mixture in mixing bowl and blend until combined. Then add almond flour mixture and mix on medium for five full minutes (the longer you mix the flour mixture, the lighter the muffins will be). If desired add fruit and/or nuts. Possible additions are: raisons, figs, shredded carrots, diced apples, chocolate chips, walnuts, pecans, etc. Bake for approximately 25 minutes, or until a toothpick inserted in the middle of a muffin comes out clean. Makes approximately 16 muffins.
