August 9, 2012 - RECIPE - Deborah Ember's Scientific Spinach Pasta
When Deborah Ember isn't in the science labs cooking up her latest experiment, she's in the kitchen, cooking up amazing foods! And her Scientific Spinach Pasta is one of her favorites!
1/4 cup olive oil
1/4 cup butter
2 cloves of garlic, chopped
1/2 onion, chopped
1 9 oz package of frozen spinach, thawed
10 cherry tomatoes
3/4 cup heavy cream
1/2 cup grated cheese (Roman or parmesan)
1/2 pound of fettucini, cooked
In a large saucepan add the olive oil, butter, garlic and onion. Saute until onion is almost clear, then add spinach and cook until spinach is heated through. Add cream, grated cheese and mix well. Finally add cooked fettucini and tomatoes and warm for a few more minutes. Makes two very healthy, very delicious servings!
